Smile Wild mushroom boudelars sauce with venison

Wild mushroom boudelars sauce

bring large pot to med/high heat
1. Add 1/4 cup chopped yellow onion
2. Add 1/4 cup chopped carrots
3. Add 1/4 cup chopped celery
4. 1 tsp chopped garlic
* stir for about 3 min to swet (1-4) *
5. Add 1/2 lbs portobella mushrooms
6. Add 1/2 lbs oyster mushrooms
7. Add 1/2 lbs ****ake mushrooms
* saute to swet (1-7) *
8. Add 1/2 tsp of salt and pepper
9. Add 1/2 cup of chopped seeded tomato
* stir for 1-3 min *
10. Add one cup of "good drinking" dry red wine
* cook until reduced by 1/2 *
12. Add 1 qt of veal stock or beef stock
* bring to a boil, then bring heat to med/low and let it simmer. *
* reduce by 1/2 ( this takes about an hour ) *

pan fry venison stakes

1. Heat 1/4 cup of extra virgin olive oil in skillet to med heat
2. Season venison steaks with creole seasoning and salt and pepper
3. Dredge venison steaks in flour.
4. Fry venison steaks to med rare/med (do not over cook venison)
* poor wild mushroom boudelars sauce around venison steak and serve *

Man that sounds good ,but im a sucker for most anything with mushrooms. Im going to try this one and will let you all know how much i over ate,lol
